Lemon Bliss Cake: A Tart and Delicious Delight

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter at room temperature
  • 3 eggs
  • ½ cup lemon juice
  • ¼ cup lemon zest about 2 lemons
  • 1 teaspoon vanilla extract

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan.
  • In a medium bowl, combine the flour, sugar, baking powder, baking soda, and salt. In a separate large mixing bowl, beat the butter until creamy. Add in eggs, one at a time, and beat until well combined. Stir in the lemon juice, lemon zest, and vanilla extract.
  • Slowly add the dry ingredients to the wet ingredients and mix until just combined.
  • Pour the batter into the prepared pan.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before removing it from the pan and allowing it to cool completely on a wire rack.

You can make lemon glaze by mixing 1 cup powdered sugar, 2 tbsp lemon juice, 1 tbsp melted butter, and drizzle it over the cooled cake.
You can also garnish with some lemon zest or a slice of lemon on top of the cake for presentation.
