In a small bowl, mix together olive oil, soy sauce, honey, red wine vinegar, oregano, smoked paprika, salt, and pepper.
In a large bowl, toss pork cubes, bell peppers, onion, and garlic with the marinade. Cover and refrigerate for at least 2 hours or overnight.
Preheat grill to medium-high heat. Thread pork and vegetables onto skewers, leaving a little space between each piece.
Grill kebabs for 8-10 minutes, turning occasionally, until the pork is cooked through and the vegetables are slightly charred.
